- ¾ cup stout (dry Irish stout or coffee/chocolate stout)
- ¾ cup whole milk or half & half
- 1 tsp Dijon mustard
- ½ tsp thyme (fresh or dried)
- Salt and pepper to taste
- 1½ cups shredded sharp white cheddar
- 1 cup shredded Gruyère or fontina

- Add cooked pasta and toss to coat.
