Gluten-Free Pizza 🌾🚫 Crispy-Edged, Chewy-Centered, and 100% Gluten-Free Delicious
Gluten-Free Pizza can (and should) deliver all the crisp, chew, and melt you expect from great pizza — and this version does it with a simple, reliable dough that bakes beautifully and holds up to any topping combo.
Ingredients (For 1 12–14″ crust)
Gluten-Free Pizza Dough
- 1½ cups (180g) gluten-free all-purpose flour (with xanthan gum)
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp sugar
- 1 tbsp olive oil
- ¾ cup warm water (more as needed)
- Optional: ½ tsp dry yeast (for extra rise and flavor — not required)
Toppings
- ½ cup pizza sauce (red, white, or pesto)
- 1½ cups shredded mozzarella
- Any toppings: pepperoni, veggies, sausage, olives, mushrooms
Instructions
Step 1: Make the Dough
In a bowl, mix dry ingredients. Stir in olive oil and warm water until dough forms. It will be soft and slightly sticky — add more flour if needed. Let rest 10–15 minutes (or 30–60 minutes if using yeast).
Step 2: Shape the Crust
Preheat oven to 450°F (230°C). Line a baking sheet or pizza pan with parchment. Lightly oil hands and press dough into a 12–14″ circle or rectangle about ¼” thick. Patch edges as needed.
Step 3: Par-Bake
Bake crust alone for 10–12 minutes until lightly golden and set. This helps prevent sogginess once topped.
Step 4: Add Toppings
Spread sauce over par-baked crust. Add cheese and toppings of choice.
Step 5: Final Bake
Return to oven for 8–10 more minutes until cheese is melted and bubbly. Broil for 1–2 minutes at the end if desired.
Step 6: Slice and Serve
Let cool slightly for best slicing, then serve hot with your favorite sides or dipping sauces.
Flavor Variations
- Cheesy Garlic Crust: Brush crust with olive oil, garlic, and Parmesan before baking
- BBQ Chicken: Use BBQ sauce, cooked chicken, red onions, and smoked mozzarella
- Veggie Supreme: Bell peppers, onions, mushrooms, olives, spinach
- Margherita: Sliced tomatoes, fresh mozzarella, and fresh basil after baking
Pro Tips
- Use parchment paper — gluten-free dough sticks easily
- If using yeast, let dough rise longer for better chew
- For extra crispness, bake on a preheated pizza stone or steel
- Let crust cool slightly before slicing to help it hold structure
Gluten-Free Flour Notes
- Use a blend that includes xanthan gum for stretch
- King Arthur, Cup4Cup, Bob’s Red Mill 1:1, and Caputo Fioreglut are all great options
- Want no flour at all? Try cauliflower or almond flour crusts (I can give you recipes!)
Final Thoughts
Gluten-Free Pizza doesn’t have to be second-best — it can be just as crispy, cheesy, and satisfying as the classic. With the right dough and a hot oven, you’re just one crust away from a seriously good pie.
Press it. Top it. Bake it bold. 🌾🚫🍕🔥
