These Beer Pretzel Bites are chewy on the inside, golden on the outside, and made for dunking in a hot, creamy beer cheese dip that brings bold, malty flavor to every bite.
They’re soft pretzels, bar snack-style — small, addictive, and soaked in buttery goodness. Pair them with your favorite pint and they’ll disappear faster than the first round.
Ingredients (Makes ~40 bites)
For the Pretzel Dough
- 1 cup warm beer (about 110°F — use lager, blonde, or wheat beer)
- 2¼ tsp (1 packet) active dry yeast
- 1 tbsp brown sugar
- 2 tbsp melted butter
- 1 tsp salt
- 2½–3 cups all-purpose flour (start with 2½, add as needed)
For Boiling & Topping
- ¼ cup baking soda (for boiling water)
- 6 cups water
- Coarse salt, for sprinkling
- 2 tbsp melted butter, for brushing
For the Beer Cheese Dip
- 2 tbsp butter
- 2 tbsp flour
- ½ cup beer (amber ale or pale ale preferred)
- ½ cup whole milk
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- Salt & pepper to taste
- 1½ cups shredded sharp cheddar
- Optional: ½ cup mozzarella or pepper jack for extra melt
Instructions
Make the Pretzel Dough
- In a large bowl, combine warm beer, yeast, and brown sugar. Let sit 5 minutes until foamy.
- Stir in melted butter, salt, and 2½ cups flour. Mix until dough forms. Add more flour as needed until smooth and slightly tacky.
- Knead on a floured surface for 5–7 minutes.
- Transfer to a greased bowl, cover, and let rise until doubled — about 1 hour.
Shape & Boil the Bites
- Punch down dough and divide into 4 pieces. Roll each into a 10–12” rope, then cut into 1-inch bites.
- Bring 6 cups of water + baking soda to a boil.
- Boil bites in batches for 20–30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.
- Brush with melted butter and sprinkle with coarse salt.
Bake Until Golden
- Preheat oven to 425°F (220°C).
- Bake pretzel bites for 12–15 minutes, until deep golden brown.
- Brush again with melted butter right out of the oven for maximum flavor.
Make the Beer Cheese Dip
- In a saucepan, melt butter and whisk in flour. Cook 1 minute.
- Slowly whisk in beer and milk. Simmer until thickened, about 3–5 minutes.
- Stir in mustard, garlic powder, salt, and pepper.
- Add cheese in handfuls, stirring until smooth and melty. Keep warm for dipping.
