This story begins about three years ago in the most inauspicious of locations, a Holiday Inn. More specifically, I was in the attached pub in one of the downtown London Holiday Inns with my dad watching a game of soccer. It was in that place that I tried my first cask ale. It was Fuller's London Pride and that one pint would lead me to a dream that soon will become reality.
After that summer of spending time in England, Ireland, and Germany where I was able to try some great beers each country had to offer, I decided that I knew what I wanted to do with my life, brew beer. Not just brew beer though, but beer that could be enjoyed by people in relaxed settings, not unlike the pubs and biergartens that I frequented abroad. A few weeks ago I took the first major step in making that a reality, I incorporated a nanobrewery in the state of IL.
Here is a quick little primer on the brewery:
- Who: Right now, just me. I am every position from the top on down, but as I get started there will be others to help out.
- What: Silver Wolf Brewing Company, a nanobrewery producing historic, contemporary, and progressive English Ales.
- Where: Chicago, IL
- When: I am looking to start production in early to mid 2012.
I hope that you will join me on this journey both here as I relate my experiences to my homebrewing as well as on the brewery's website once I have that up and running. I want to really engage the craft beer and homebrewing community throughout my startup process.
